This is considered the best meatloaf recipe. Why you ask? Bacon. How can anything wrapped in bacon not be the best?
Ingredients:
1 lb. ground sirloin
1/2 lb. ground sausage
1/2 c. chopped onion – sweet or yellow
1/2 c. chopped bell pepper – red or yellow
10 crushed Saltine crackers
1 egg (large) beaten
1/2 cup milk – whole or skim
1/4 c. parmesan cheese
1/2 tsp. salt
1/4 tsp. ground pepper
4 bacon strips
First off as always, preheat your oven to 350*. In a large mixing bowl, mix all ingredients except for the bacon. Mix well. Place loaf into your greased pan leaving a small edge for grease run-off. Smother loaf in a layer of Ketchup and place bacon over meatloaf. Bake for 1 hour and let cool for 10 minutes before serving.
