Although this recipe is simple, it ranks among the best. Quick and easy, there will be enough here to feed the entire family and have some for leftovers. Enjoy!
Ingredients:
2 lbs. ground beef
1 cup finely chopped onion – yellow or sweet
1 cup bread crumbs (dried)
1/2 cup broth – chicken, beef or vegetable
3 Tbsp. red wine (dry & optional)
2 tsp. Worcestershire
1/2 tsp. salt
1/4 tsp. fresh ground pepper
8 oz. can of tomato sauce
Make sure you have your oven pre-heated to 350*F. Combine all of the ingredients in a large mixing bowl except for the tomato paste. Add only two Tbsp. of the tomato and mix thouroughly. Place the uncooked loaf into an oiled meatloaf pan (10×5) and pat down leaving an edge for grease runoff. Use the rest of the tomato sauce for smothering the uncooked loaf. Bake for approxamately one hour. You are looking for a firm loaf and the sauce to bubble. You may have to adjust cooking time according to your stove temp.
Let your meatloaf stand for 5 – 10 minutes in the pan, remove, slice and serve.
